Tony Conigliaro, Spike Marchant and Giles Cowan, some of the UK’s most innovative bartenders,
launched a brand new feature for Bar.09 under the guise of their
new company, Drink Factory.
 
 
Bar.10 will welcome back our esteemed alchemists to demonstrate their latest liquid inventions using smoke-guns, centrifuges, vacuum machines and other creative paraphernalia.
 
 
Drink Factory will be working alongside some of the biggest names in food and drink using a variety of techniques to present a unique vision of drink making.
 
 
Last year speakers included Bernard LeHousse, a leading food scientist who has collaborated with the Fat Duck and El Bulli; Audrey Saunders, New York’s Cocktail Queen; Harold McGee, one of the fathers of modern gastronomy; and Dave Wondrich, chronicler of the world’s cocktail bartending legends.

Harold McGee and Tony McGee: Through the Mixing Glass - further adventures into an understanding of cocktails and their secret science.
Harold has a legendary status as one of the Daddies of Modern Gastonomy. His talks with Audrey Saunders were a sell-out last year. In 2010 we are pairing Harold with Tony C who needs little introduction as one of the most innovative thinkers in contemporary cocktail making. They will be looking at some of the problems and mysteries encountered in day-to-day bartending.
 
 
Bernard and Dave: The Odd Couple - Matching, mixing and the mystery of Spirits and Flavour Pairing. Two of the best explore the unusual.
 
 
This session looks into a variety of different spirits and how scientific analysis opens up the doors to completely new creative food and drink combinations. Take one part Bernard Lehousse. a leading food scientist; add equal measures of Dave Broom, a maverick mastermind of spirits, add ½ part science and ½ part inspiration. Light the blue touch-paper and retire.
 
 
Dave Wondrich and Dale DeGroff: A la Recherche du Temps Perdu - in the heady days of 21st century Mixology creativity have we forgotten the basics?
 
 
The Old Dogs bite back. Two legends of the bar world stand shoulder to shoulder to present their contention that not only do we stand on the shoulders of 19th century giants but that we have never progressed beyond their achievements. One in the eye for you molecular girls and boys!
 
 
Dr Andreas Selle: With a Vesper and a Bang - Cocktails and chemistry. Personal injury lawyers stand by... an explosive session is promised.
 
 
Andreas is one of the UK’s top scientists and the head of inorganic chemistry at UCL. He is also passionate about the science in the world around us and in particular the food and drink we take for granted. He recently designed all the experiments and was the lead consultant for the BBC series “Chemistry: A Volatile History”. He is a wonderful speaker and his talks are always illustrated with eye-opening whizzes, fizzes and bangs!
